Reader Aaron Foster has posted a wonderful article on home-made pho over at Aliment. I wish I had not seen this great photograph of his final product so early this morning - now I'm starving, and the little Vietnamese place around the corner doesn't serve pho in the summer (today's high here in Sacramento will be about 104)!
Even though it is sacrilege, and I don't believe that veggie pho really is pho (or food for that matter), too many poor misguided vegetarians ask me about vegetarian pho for me to ignore it completely ... So, I give you: a better veggie pho recipe (brocoli? peanuts? wtf??).
